Can anyone confirm if the 2TB Seagate Backup Plus Slim can work in a (2011) Mac Mini as an internal HDD? This drive is commonly swapped into PS4s because it has a SATA connection inside (not a soldered usb connection) and its low price ($120 CDN/$100 USD). From what I can tell, it should work just fine in the Mini, but I couldn't find anything online. I will probably just end up buying it and trying it myself if no one can confirm if it will or will not work.

I'm also seeking advice on a dual hard drive setup. I currently have a 500gb HDD which came with my mini in 2011. It's been full for a while and I've had to transfer files to external HDD's just to clear enough space to backup my 128GB iPhone. My idea is to have a 240GB SDD paired with a large regular HDD (hopefully 2TB Seagate :)). I already have the dual hard drive kit from ifixit. Does anyone see any flaws with this plan? I just want to check with th experts before I make the final move.

Yes. I have two of those bad boys in my 2011 Mac Mini.

I use the iFixit kit, and i can't see why it shouldn't work for you too. :)
