Be careful. Because their are a few clowns that work at all apple stores. And they will sometimes tell you. That yes, it will void your warranty. Mind you these are the sales people and not the geniuses behind the counter. At least I haven't heard this line from on of them yet.

And there are great deals on RAM out there. I fit my MacBook with 4 GB for around $100- and that was a year ago.

It is true, however you better be careful with it in the Mini. The risk is higher that you will damage something. If something does go wrong with the mini you should be mindful that someone will look that it doesn't match the original specs and call you out on it saying that whatever is wrong with it could be your fault so you may want to pop in the original RAM before service.
You might get lucky on find a good deal on black friday but I think the best deal can be found online. Check out OWC, I got 4 GB for $80 a few weeks ago.
Yes, $56 is a good price. I checked both crucial and OWC and the 4 GB kits are about $56 dollars plus shipping. Either brand would work well.
+1, adding new RAM to an iMac and adding new RAM to a mini are two different things. If you are going to add RAM to the mini, make sure you know what you are doing.
