By which I mean - when you double tap text to fill the screen. Go on the vast majority of websites and it still expands text to iPhone 3-5 screen width, leaving a gap at the right hand side rather than text filling all the way from right to left.

It's like Apple have never bothered to update Safari properly for the new phone formats and has bugged me for ages!

Just me?

Looks about the same on my 5. In this case I think it's the website and not iOS. Other examples?

Well it seems to be any non phone-formatted site, as in ones using standard and not "Mobile Versions".
