I have an iPhone 5 that runs on the 32 bit A6 processor. Just wondering if developers are writing new apps or updating existing apps in a way that makes the app require a 64 bit processor (A7 or newer). Does the App Store mandate that apps work with 32 bit processors, or can developers drop support for 32bit at their discretion?

I haven’t noticed any apps I use stop working yet. Thanks.

They can choose. This was even the case on iOS 10.
 
For the developers and apps, it is only mandatory that apps have 64 bit support. They can still have part for the 32 bit devices.
 
I would not expect anything new. Some updates (seeing on my iPad). iOS breakdowns are usually along the lines of 90% of users on latest OS, 9% on previous, 1% of older. Not a lot of incentive to develop new apps for older OSes.

But could end support all together. Example: Google Drive has been updated several times since iOS 11 release, still says supports iOS 9.3.5 and higher, yet they dropped iPad 3 from supported devices.
 
It is up to developers. If you look at the App Store and try to download app for the older iPhone or iPad running iOS 5, you have option to download last compatible version, if you previously purchased (also and free) app.
