So if I were to redownload Catalina from the App Store now would it download the latest build just released 10.15.1 or shall I wait a few days?

Is there a way to verify the version number before I try to create a bootable USB Flash drive out of it?

My update says 10.15.1 at the upgrade screen in system prefs
But that doesn't tell me if the ISO is actually Catalina 10.15.1

Your update window shows you, your currently installed macOS build

guess I'll have to try myself

Just tried downloading it and it's downloading 10.15.1:

The info screen for Catalina, in the App Store, shows that the download that you should expect would be version 10.15.1. I guess there's one good way to find out...

Yes, it does. That is how I had to upgrade my patched 10.15 on a mac pro 5,1. I downloaded the full installer, created a new patched installer, and installed over the 10.15 and i worked fine, keeping all settings etc.
