Will I Have to re-install all my 3rd party apps if I upgrade to 1.1.1 using a method for safely upgrading an unlocked iPhone? From what I gather the phone has to be "re-viringized" before upgrading, will this cause me to lose all apps and data on the iPhone or just the firmware?

yes because some versions of the apps are not compatible with new firmware...so you might cause instability. But basically revirginizing will prevent bricking and you can restore the settings within apps, like screenames, by restoring to a backup.
