A friend wants me to jailbreak her 3G to run an app called iBlock. The first part of the tutorial states "Hold shift when clicking restore in iTunes". will this erase all data or leave everything intact?
 
If you Jailbrake with QuickPwn it won't erase. If you do it with Pwnage tool it will. This is with Mac. Not sure what the equivalent names are with Windows.
 
will the sync recognize the new jailbroken ipod, can i just backup the address book?

Just get QuickPwn and follow the instructions. It will not erase any data on your iPhone. All contacts, media etc.. will be there.
 
Backing up in iTunes doesn't back up anything that is already being synced with your computer. Because contacts are synced to your computer (Address Book, Entourage, Outlook, whatever), there's no need to back them up, because they'll just be synced back to the phone if they're erased... unless your friend for some reason isn't syncing her phone's contacts to her computer..
 
i know that quickpwn won't erase it, but i fear that the first step, the shift+restore in itunes, will do the damage

Um.. all you have to do is sync it to iTunes.. and make sure the contacts are sync'd.. like example.. if you have Address Book for Mac or similar for Windows.. sync your iPhone to that program..

If you want it jailbroken but not unlocked.. just update to 2.2.1 in iTunes and then everything will remain on the iPhone (contacts, media, etc...) then do the QuickPwn thing.

If you want to unlock it.. then use the choose firmware option and select the 2.2.1 without changing the baseband. Then after it is jailbroken, sync it to iTunes and choose to merge address book onto iPhone and it will be back to normal.
