I'm very interested in doing some development with the SDK, but I do not own any Mac platforms. Will the iPhone SDK and its associated tools run on a Mac Mini? These are fairly inexpensive, and they might be a great platform to do development on.

Any suggestions or tips about this?

Yes - provided that it's not an older PPC chipset. I have one of my SDKs installed on a mac mini, and it works fine. Note that I have the RAM maxed out at 2GB (stock minis have only 1GB), but it would probably run fine on a stock mini as well.
 
Excellent! The prospect of dropping over a grand for a notebook version is too much for me at this time, but a Mac Mini is MUCH more doable.
