I use my Mini, as my media hub for my home theater, and i would like to play hd-dvd's with this, does anyone know if the mini will recognize the 360's hd-dvd add on player?

The question you should be asking is whether HD-DVD's are supported at all on the Mac platform. Unfortunately I have never heard of any solution for HD-DVD or Blu-Ray for playback of commercial movie content.

It is possible that these drives can be used as regular data drives, Blu-Ray is supported as such with Roxio Toast. But I know of no other solutions.
 
The Xbox 360 HD DVD drive will allow you to read optical discs on a Mac. If you're running Leopard, you can browse the file-structure of an HD DVD using that drive. However, there is no playback support for commercial HD DVDs on OS X.
 
If I had one laying around I would try it. I should be getting one for christmas. In theory it should work in bootcamp. If you can wait PM me a week after christmas and I will try it on my macbook via bootcamp and see if it works for you.
