If you were to install windows 7 on VMware Fusion 3 is there a chance that if your windows 7 gets infected with a virus or a worm (more like when it gets in infected:)) can that virus move over to your mac? And I know you can install windows 7 either more confined, like in a screen or just like open programs in Mac OS X, does one way make it safer than the other if there is the chance of a virus moving over onto your mac?

It is possible under certain circumstances. If you enable read & write support for shared folders, then any shared folder and subdirectories within could potentially be infected, and their contents corrupted if the virtual machine were to be infected with a virus or trojan. Windows viruses can't execute on a Mac, however, without the use of a program like CrossOver Mac, but even then, damage would be limited due to the way CrossOver operates.
