Unless you don't have photoshop or don't have time to add your own icons to a custom theme I'd stick with a more stock looking theme such as Ayeris or similar...

Most of the themes in Cydia tell you the number apps that are themed. Go for the highest amount themed.

You have search for themes in Cydia and read the descriptions.

You might also want to add Iconomatic, if it is not included in your theme. Many times there are not specific icons for some esoteric apps. Iconomatic at least adds a chosen theme mask to those apps if you're not savvy with Photoshop or making your own from .psds.
