I’ve got a 2019 iMac at home (supplemented by an iPad and new MBAir). I’m debating wiping it and starting fresh or moving back to a 2 piece set up with a Mac Mini/monitor. I really like the iMac AIO but not feeling the current options. Suggestions?

Depends on budget. Mac mini+Studio Display will give you plenty of ports and you don't have to worry about non-Apple monitors looking terrible due.

First wipe/reinstall, and if it doesn't do it for you, then buy new?

Also, if it isn't running from SSD, consider either upgrading, or even installing a new copy of macOS to an external SSD and compare performance.

Running an OS from hard drive these days is like trying to tow a boat with your Ferrari (or trying to run a 100m sprint in scuba gear, etc.). You're holding the rest of the machine back massively.
