I'm loving my ipod touch. It's a 3G, 32g, and it's great.

I'm looking for a bluetooth or other wireless headphone option. I've seen some pretty pricey things out there, but I don't need studio quality. In fact, if my $10 bluetooth headset that came with my phone would pair with the ipod, i'd be a happy man. Headphones for both ears would be ideal, but not necessary.

Any suggestions?

I don't think there is a bluetooth solution for the iPod touch because of the profiles it does/doesn't support. See this for why the bluetooth headsets will work with an iPhone but not an iPad or iPod touch.

actually they do when the os was updated to 3.0 it allowed stereo headphones to work but only those none of the single ear ones will work

I use the motorola s9-hd with my itouch.
I quite like it, but you do not have full functionality with the itouch. I can pause/start a song, and adjust volume, but that's about it. I could never go back to wires. Makes walking the dog a whole lot easier.
