I think what the AirPods Pro have going for them is that you know the experience will be solid in terms of all around performance with little to no frustration. You know they will easily and reliably work with your Apple devices. You know the sound quality will be very good, and that the ANC will also be very good (note that I'm not saying "great" or "the best").
I never owned the previous AirPods, or any other wireless earbuds/headphones besides my wireless headset for work. I've never owned any noise cancelling headphones either. I was coming straight from the stock wired earbuds that come with the iPhone. From that perspective, everything about about the AirPods Pro feels like a significant upgrade: Audio quality is better, ANC is amazing, Transparency Mode is a nice option to have for safety, battery life is a none issue, no more wires makes me happy, as does Siri compatibility. Additionally, and this is actually very important to me since I tend to leave things in pockets and around the house, I can find the little buggers using the Find My app!
I listen to music, podcasts, news, etc. I'm a huge music fan, but I've never been an audiophile. I have had friends who were/are, and I have heard music played on high end systems. It's impressive, and I can hear differences even though I may not have the ears to fully appreciate them... but these aren't differences I obsess over. We have a Sonos Play 5 in our living room that definitely sounds better than the smaller Sonos One in our kitchen. Given the choice I'd rather listen to music on the Sonos Play 5, but when I'm in the kitchen listening to music while preparing a meal I forget about the difference and just enjoy the music. Our brains have tremendous capacity to compensate for lesser sound quality. While I have enjoyed listening to music coming out of my friend's large Klipsch speakers, I also enjoy listening to music on my devices. What does matter is being able to hear the individual instruments and vocals well enough that you don't have to crank up the audio. The AirPods Pro do this very well in my experience.
From a mobility perspective I'm not looking for something that completely blocks out the outside world. Since I walk to work along a route that doesn't always have a sidewalk, I need to hear traffic without it drowning out what I'm listening to. The AirPods Pro seem to be a good mix for that. I can still hear the cars and city buses that are driving a few feet away, but I can also hear the music much better.
