Ok - it connects once - then if I eject it and go to re-connect - it won't - iTunes just sits there like a bump and does nothing. Is there anything I can do to get it to recognize it?

I usually have to re-boot then plug it in again.

It's a pain!

Get it to reconnect and perfom a hard restore from itunes...This will probably solve your issue...
 
I had the same problem. If you have another computer, try connecting it to that before you Restore the iPhone. With me, I would connect it to my MBP and it would work, but if I reconnected it...nothing...iTunes just sat there. Then I tried using another MB I had and I was able to connect/reconnect to my hearts desire. I then tried another iPhone (my wife's) with my MBP and could only get it to connect once. I confirmed that it was the MBP or iTunes. I downloaded and reinstalled 10.4.10, since this was supposed to fix some USB issues. Then I downloaded iTunes 7.3 again, still no luck. So I deleted iTunes, (NOT the library, just the application)...trashed the preference files, downloaded iTunes 7.3 AGAIN and that time it worked just fine.

I would try to confirm that it is in fact your computer, but then try deleting and reinstalling iTunes.
 
I had a similar problem,
make sure it is on a USB 2.0 port, that will help a lot, it isn't required but if you dont I found that the iPhone would time out when trying to sync,
if it is a desktop you can get a $30 PCI card for it,

Next make sure the iPhone is plugged directly into a port, not a hub. that will speed it up some,
and if everything else fails, make sure everything else i unplugged, and then try to connect it.
