Would it be bad for Mac to use older printer drivers not meant for that OS?

I have old printer and in Canon website, there are drivers, latest for OS Lion, not for El Capitan.

Would it be dangerous to try and install drivers meant for Lion? Or would the issue just be if it works or not? I'm just wondering if there is more to dividing drivers by OS than incompatibility or would it cause security risk?

The bundled apps might crash because of the API changes in OS X since Lion (this is the case with my Kodak printer that has drivers just as old), but you won't have problems with the driver otherwise.

The way I see it, if the print drivers work and don't seem to crash anything, well… just use them and be happy…

So if they crash just remove them (and nothing will be damaged), if they don't crash use them?

Pretty much that. I don’t know if that would remove the driver though. I just get these infrequent out of the blue messages about the Kodak program crashing in the background.

My parents are using a 2004 printer under Yosemite still, if that helps put your mind at ease. But OS X automatically found that driver.
