I understand that most of the people here have unlocked phones and they know what to do and what not to in order to keep their phones from being upgraded to 3.1.3

I'll be buying an iphone and unlocking it to use it with T-mobile and i want to make sure that when i bring it home and try to sync it with my music and address book is not gonna somehow upgrade by itself because that means that i would end up without a phone.

Sorry if this is a silly question but i'm pretty sure that my computer would ask me before making such a big upgrade right..

and while i'm here, if i ever wanted to restore my iPhone which is the safe way to do this process.. i know i have to hold the "option" key to choose the 3.1.2 firmware but i don't have this firmware in my mac.. so do i need to download it or how do i restore my iphone.. i don't mind if i have to jailbrake and unlock again i just want to know how to do it in case the phone comes with things i don't want..

For Q1, the anser is: No, definitely not. You have to go out of your way in order to update, and then wait approximately 5-15 minutes while iTunes downloads the update. It's not difficult at all in order to not update your iPhone

In regards to the restoring process, it pretty much just matters on which type of iPhone you get. The 3GS is the most difficult (in regards to downgrading and the jailbreak/unlocking process) with the original and 3G being pretty much "open" till the end of time.
 
iTunes will only upgrade your phone if you choose to do so.

If yo do not have the version of the firmware you want to restore to, you can always get it from http://www.poorlad.com/iCommunity/.

Please note that if you have a 3GS you will only be able to restore to an older firmware file if you have your SHSH backed up either in Cydia or locally via Umbrella.
 
Both of your answers are extremely helpful, I'm getting a 3GS but it has 3.1.2 so I don't want to downgrade, just restore so I can sync with my itunes, do I even need to restore? Or will it just sync? If not can I restore to my present firmware without upgrading?

By disconnecting from the internet maybe?

You can just sync it, there is no need to restore. Unless the phone's SHSH is on file through Cydia, however, you will not be able to restore it to 3.1.2.

You may or may not be able to restore to 3.1.2, depending on several factors. If the phone has 3.1.2, just jailbreak it with Redsn0w (skip the restore steps if you get a tutorial).

Should just sync to your iTunes account.
