I'm experiencing the same frame-dropping issue when streaming to Apple TV that so many others have reported. Every so often the video streaming from iTunes drops a frame or two resulting in stuttering motion. Has anyone experienced the issue, jailbroken the Apple TV, installed Plex or XBMC and have the issue disappear?

I haven't jailbroken my AppleTV2, I simply run my movies through Handbrake on the ATV2 setting and I'm good to go. No stuttering via WiFi, it simply works.
Try it with a wired Ethernet, if it works your WiFi may have interference problems. The ATV2 supports 5GHz N might be worth getting a router that supports that (assuming you don't)

I have a Time Capsule that supports 5Ghz, but I was getting a weak signal with video that would stop for minutes at a time using it. I guess I can try it again.
I looked at your old threads, you're doing Blu-Ray ripping. You have to change the quality tab on Handbrake try 22.

It's not just ripped Blu-rays that have the issue. Ripped DVDs exhibit the same problem.

Have you tried hard wiring via ethernet just to eliminate that it's not a communications issue? Even 5ghz N wireless can't hold a candle to the stability of ethernet. Best to at least take that possibility off the table.
I run 2 separate ATV2's, one wired and one wireless, with content on a NAS and both units running the latest XBMC Eden beta, and the wired one definitely outperforms the wireless. Wireless is acceptable, but certainly does occasionally drop frames or pause to buffer.

I also use plex.
At 4mb/s it's actually a 720 stream converted on the fly from 1080. so the appleTV never sees the 1080 content.
anytime i try to go to the 5mbps/1080 setting or above i start to have pausing issues. (on wired etherent)
IT have to be downcoverted anyway since the ATV only support 720p, no need to use 5mbps or more, that is only shocking the network and the processor, that is why you get the pausing. I used the 8mbps setting on my roku box that can hadel 1080 and no issues there.
