My 2010 MBP can't run all area's of the game on Ultra fluently at 1680 x 1050. Can the 2011 MBP run WoW (OS X version) run all area's at Ultra at 1680 x 1050?

Highly doubt that any mac save for the Mac Pro tower can play games at ultra with good results. The mobile GPUs just can't handle it.
 
Via bootcamped Windows, maybe. Thing is that the Water effects, Shadows and Sun Shafts really drops your FPS way way down in OS X. Probably because the OpenGL version in OS X is subpar to DirectX in Windows atm, it doesn't handle things like that very well at all.

Apart from those three options, you could probably run the rest on Ultra - or at least High. Depending on how much FPS you are comfortable playing with.

The 2010 had weaker graphics cards. The 2011 15 inch should run it pretty well.
Especially the 2.4 and 2.53 ghz MBP from 2010 has only 256MB vram, which probably was the main reason it can't max it. If you had a 2010 with the 512MB graphics you should still get a 30-50% better performance on the new 1GB MBPs
 
I play WoW on the 2011 machine and it is SUNSHAFTS that are the killer for me, I am playing currently at 1440x900 with everything on high, but I have to turn sunshafts off because the frame rate is really inconsistent and sometimes plummets.

Did the same for my mid 2010 model and performance on the 320m was rather impressive for a shared memory architecture. Otherwise I have everything else at full detail.
 
It's been awhile since i played wow (before xmas), but as far as I remember that sunshafts and Anti Aliasing didn't go well together, you had to turn one of them down.

Other than that i played with everything maxed at 1680x1050 res, but that shouldn't be a problem with a GTX285.
