I didn't notice this issue until this week and I don't think I had it before that.

Basically, there is like 0,5-1s delay after I press the side button to lock my phone and it locks. When you wait for it to lock, you really notice the huge delay, whereas on my old iPhone 6s there isn't such.

Maybe turning off a OLED just takes some more time?
I don’t see a real problem with that?
I also believe there is some little animation?
When I first got the phone I don't think there was a delay, but maybe I'm exaggerating

Oh that makes perfect sense.
So with ApplePay this slight wait will be there.
I turned off Apple Pay access with the power button and there's still a delay on my X versus my 8. Pressing the button on the 8 gets an immediate response while the X is pretty much a full second before anything happens.

Edit: Nevermind. Fixed it by turning off Guided Access which was linked to my triple-click accessibility shortcut. What's strange is I've never once used guided access. Is it set that way by default?
