Did TextEdit suddenly begin supporting Dark Mode in macOS 10.14.2?

Whuhoo! I'd been hoping for that with Mojave's launch and was almost resigned to hopelessness when it wasn't there.

Dark Mode is new, I'm not surprised that they're still rolling it out

Agreed – Logic Pro X still doesn't fully support the native API, for example. But they really seemed to make a show of how all their built-in apps were heralding its arrival; Notes, System Preferences, iTunes, Photos, Safari… even Disk Utility and Activity Monitor. So TextEdit with a white editing area seemed to be where it had landed. (In fact, maybe its chrome was dark originally, and the change was to make the editing area dark by default as well.)

Maybe. TextEdit worked as intended, Apple dark mode is supposed to make the UI dark, not the actual content. TextEdit has got a WYSIWYG mode, and it's not nice to invert colors there.

In 10.14.2 they added the option to make the content dark too, so everyone will be happy.

Aha, you're right – there it is in the menu.

The content it seems their intention has always been flexible on; Mail had a similar option from Mojave's launch, and Notes defaulted to dark right from the start.
