I've recently had my 3G OS 3.0 jailbroke and have downloaded the following apps;
Winterboard
Backgrounder
and a few other nominal ones.

My question is, can i still hook up to itues (will NOT have an internet connection) and update my music library without messing anything up?

Yes, use your iPhone with iTunes as you would before the Jailbreak

yes. the only thing you will need to do is rejailbreak to use those apps after you update from apple
 
Alright, so I should be good as long as my laptop is not hooked up to an internet connection.
 
LOL, I am beginning to have a love/hare relationship with this phone. I love messing with all the gadgets, but at the same time I can't seem to put the damn thing down! LMAO
 
Apparently push notifications go haywire with jailbroken 3.0. You won't need it though because you have backgrounder :D
