Sorry if I missed out on this discussion or anything.

I just found out that YouTube App dont have the option to change the display/quality of the video to 1440p/2160p(4K)? (The video I am watching on desktop does has 4K option)

The youtube app isn't going to support higher than 1080p on the iPhone since thats the highest resolution screen offered.

I found out on my 6 Plus there is an option to change it to 1080p on wifi, but my 6S only got 720p ?? What happen? Isnt 6 plus and 6S screen resolution same just that ppi is different?

No - the Plus is 1080p. The regular 6 is closer to 720p
