I have looked on all the demo's on apple.com and on steve's keynote but i have not seen the pinch being used at all in safari. And i'm pretty sure i read it somewhere that you couldn't pinch to zoom in safari. Can anyone confirm this?

you can both pinch (i guess reverse pinch) and double tap to zoom in safari. steve also mentions this in the macworld 07 keynote, around the 1 hour, 8-9 minute mark.
I've pinched web pages on my friends iPhone... so I assume you can do it on the iPod Touch as well.
