As it is for HTPC, consider those new passive cooled Celeron boards. They are around 100 bucks including PSU, they perform on par with an old C2D E8400 (3Ghz), they have HDMI out, USB 3, full DTS/24p support, 4x SATA connector for up to 16TB storage, GPU HD decoding including 4K.
And the save tons of energy when running 24/7 as media/cloud server, as they only consume 10 watt. The Mini will use around 50-60 watt in use.
 
For your uses, you shouldn't need to enable TRIM.

Another little bump for this. I put a cheapish SSD in, and I like how much it has improved. It is now pretty usable apart from graphics related tasks.

Sorry for the noob question, why would TRIM not need to be enabled?
 
Would probably be used mostly for the usual,

Web browsing, mail, messengers (Skype, Slack), bit of office, Evernote.

Using it in the office, we share files using bittorrent sync
