All 30" 2560x1600 displays will either need dua- link DVI (like the 30" ACD) or displayport connections (like Dell's 30"). Single link DVI will only drive 1920x1200 resolutions.

Thunderbolt port with support for up to 2560-by-1600 resolution
HDMI port with support for up to 1920-by-1200 resolution
DVI output using HDMI to DVI Adapter (included)
Support for dual display and video mirroring

The only way to drive a 2560x1600 display would be to go from the TBport and use a MiniDP-to-dual-link DVI adapter. No amount of adapters will get you any better than 1920x1200 out of the HDMI port. Remember, just because the mini's HDMI port is 1.4, it doesn't support every part of the standard.
