I think it’s best to get it updated before restoring your data or syncing from iCloud. For example, if you ended up restoring from backup or syncing from iCloud and you update your iPhone after, you could be interrupting that process. Sometimes that restore/sync could take few minutes or hours. It would be ideal to get it to the latest firmware then restore/sync your data without the need to update it again.
Yup - that’s what i do to. The one thing I can’t or some how miss - the new phone always wants to activate cellular service the minute you turn it on and start entering your data. So I also let it startup cellular, get on WiFi…then update the iOS. Once it restarts from that, and assuming my 13PM is on the same iOS build now…unpair the AW from old iPhone, backup the old iphone including the latest AW backup, then restore new iPhone from old backup, pair watch to new iphone and restore That, too.
 
Good points, and also back to your choice of aesthetics. Since you’re going Aluminum S8, the price difference is a bit larger.

In my case, I was planning on a SS Silver S8 this year, but it’s only another $45 to get all the other features in the Ultra. I also used to collect G-Shocks and diving watches, so the Ultra is right up my alley.

Sounds like you’re in tune with exactly what you want and need.

And to install that day 1 update, you have to do that before you load your current iOS 16.0 backup. That's the point, you can't just fire up the 14 and load your backup if it was done on iOS 16.0 on your current phone, you have to install the day 1 update first.
Wouldn’t it still be 16.0? So, you are saying there are two different versions of 16.0? Different revisions? I’m guessing I would need to set up as new phone and possibly lose a lot of things then once I use my back up it’s all back to normal then update to 16.1?

I think we said it’s better to update first and then sign in because it takes time for your iCloud data to settle in.
