Tomorrow I'm going to get gas for my trip on Friday. I plan to be at the CC right at 9AM. The CC is a 32 minute drive, but I'll enjoy every minute of it. When I get the iPhone home, I'll unpair my Apple Watch and then backup my 12 PM to iCloud and also to iTunes. My 12 PM already has an eSIM and I'm on T-Mobile, so we'll see how that transfer goes. I"m going to go with transfer using iCloud backup. I'm pretty sure that during the update, I will be required to update the new iPhone to the iOS 16 final build. I'm a developer, so those apps most probably will not transfer, but we'll see. If not, I'll have to recreate them on my new iPhone using Xcode. It should be simple to register the new iPhone with Xcode. If I don't like how the iCloud backup went, I'll erase the iPhone and restore from the iTunes backup. Then it's time to pair the watch with the phone and select the backup for that.
