I recently switched from almost-exclusively using a single 27" 4k monitor with my M4 Pro MBP to using two displays - first a new 27" 4k with the existing one, then my MBP's built-in display after the new monitor died (just inside the return window, thankfully).

I've always been a heavy Spaces/Mission Control user, with specific desktops set up for specific uses - file management in a center space, with productivity applications (Lightroom, Photoshop, Logic) to the left, and administrative and social tasks (email, messaging, social media, RSS) to the right, etc. Needless to say, this gets more complicated with multiple monitors, but after experimenting a bit, I've hit on an arrangement that works well for me, with multiple virtual desktops on each of my displays, and apps assigned to each as needed. Then I reboot, and macOS moves all but one of the desktops from my 27" monitor to the MBP's built-in display and loses many of the app assignments.

Is this just me, or is this just broken right now?
