Crappy audio is the biggest issue. A school play with a single shot and shaky tripod work with horrible audio. I can maybe live with the shaky camera work but bad audio ruins everything. Even with good gear bad audio is a killer.
Then get a voice recorder.

OP, are you making these videos just for yourself or to share either online or in an in-person group setting somewhere? That really makes a big difference with regard to concern about the quality of the video and sound recordings. If it's just a sermon by some preacher in church or some sort of group presentation you're watching and which you're videotaping with your camcorder for your own playback and enjoyment again later, that's a whole different scenario than someone shooting something for public consumption which really needs to be professional in presentation.
