I don't have a 4K monitor. The max resolution of the U3415W is 3440 x 1440, with HiDPI on the max it will push is 1720 x 720.

I have HiDPI turned on via this Terminal command...

Code:
sudo defaults write /Library/Preferences/com.apple.windowserver.plist DisplayResolutionEnabled -bool true

...do you know a better/alternative way?

Use ResXtreme, pick the 3440x1440 scale x2 resolution.

Will give that a go next. SwitchResX wasn't able to help me out.

Edit: No dice with ResXtreme either, same options are available.

Yup, DP 1.2 is up and running. It's just looks like that it's not able to cope with my Ultrawide screen.

Shouldn’t be like that. If the PULSE RX580 can drive my 32:9 3840x1080 144Hz 10bit HDR monitor flawlessly at 7680x2160 HiDPI, and able to render the UI at 8K HiDPI 60Hz, it should able to easily output 6880x2880 60Hz HiDPI as well.

Okay, I installed the 138.0.0.0.0 BootROM from the Mojave Public Beta...and that damn install file has been looking at me for days now trying to tempt me to install it. Today I caved in and ran it.

Guess what!? My text problem has gone away. Running 'Default for display' with no no HiDPI at 3440x1440 is back to looking perfect.

Makes me think that, as the OP surmised, there are issues with 10.13.6.

I can drive my 4k monitor in HiDPI no problems.

Possible.

AFAIK, at least 3 things will affect the resolution choices.

1) OS version (or driver version)
2) GPU
3) monitor

One of these changed, that resolution list can be changed.

e.g. Long time ago, 10.9.0 let me select 2560x1440 HiDPI on my HD7950 to drive the 27" Apple Cinema Display. But on one of the 10.9.x update, this ability disappeared.

And very obvious, the monitor and GPU itself can affect the possible resolution.

Thought I would Let anyone who had similar issues that 10.14.1 solved all of my issues. No more crazy graphical bugs even with freesync on the monitor turned on so now I don't have to switch off freesync to boot into OSX.
