yes I know that 128gb are a perfect sweet spot for me- that's why I'm so mad at Apple! I can't project how 96gb will behave... 256 feels like a total overkill at 4000€... but I dont want the system to end up slower. I want the faster chip for sure!
Remember, the M5 SSD and RAM speeds have increased a lot since the M2 so you might want to try out the 96GB for 14 days.

If you really need that extra, then return and upgrade to the 256GB.
 
Same issue here, I'm coming from a 192GB Mac Pro 2019, dissapointed its just 96GB on the Ultra. Might consider the M5 Max 128GB at least. The 256GB Ultra is insanely out of budget for me.

Might get a used M3 Ultra with 128GB RAM if I find any

I don't want to hit the SSD for pagefiles too much, I consistently use 160GB+ RAM with my workflow.

Also considering that the GPU RAM is also shared on the M series, that's another 5-15GB just for GPU that you can take out.

It's 96GB, 256GB and 512GB on the M3 and M5 Ultra.
