Here is my list! I really love cydia.

%hook's law - speed up your visuals
Action Menu
Activator
AdBlocker
AppInfo - shows your list of tweaks/apps and let you easily navigate to them in cydia, or export in an email.
AutoProtect for iOs 6 - no lock based on your wifi network (home/office)
Barrel - visuals
Bars - signal strenght
biteSMS - 7.3
Browser Changer - used mostly for the open in GoogleMaps option, as I use Safari.
Calendar for NotificationCenter
CallBar
Cartoon Font - used with bytafont
Crash Reporter - when having lots of tweaks, you need this to debug issues and isolate villain tweaks.
Dater - stamps your photos with dates.
f.lux - must have for your iphone and macbook :)
FastBlurredNotificationCenter
FullForce for Phone - nice one to have fullscreen legacy apps.
iCleaner - one of the best tweaks, I'd love to have a paid version too.
iFile - you all know this
Infinifolders - stock folders with extra space
KuaiDial - not so popular, still alpha, but a must have tweak. It has T9 dict, photos to contacts and lots of other features. Works brilliantly.
LastApp - When I double tap the status bar it gets me to my last opened app. Nice one.
Monocle - Fullscreen mode.
MusicBanners - Self Explanatory.
Nitrous - Speeds up your java based apps.
NCSettings - Replaced sbssettings with this one.
NoVoiceMail - removed the voicemail button in dialer.
ProTube 2 - One of the main reason I jailbroke. Download youtube videos/music, select your quality when viewing videos. Combined with Bridge make a perfect solution.
Quick Reply for WhatsApp - I love it.
Safari Download Manager
Sleipnizer for Safari - A must have for safari users. Safari on steroids and the reason I am still a fan of Safari and did not migrate to Chrome. Love it.
SpringFlash - Double tap lock button to bring out the flashlight. Very handy.
Springtomize 2 - Another great package featuring 20 in 1 tweaks.
SwipeAway - Kill background with a swipe.
SwipeNav - Love it
SwipeSelection - correcting spelling has never been easier.
TetherMe - You all know this.
UnlimTones - Free tones.
Zephyr - You know this also.

As you can see I have a big list, but my i5 is rocketspeeding through all these, no hiccups, Cydia is the reason I'm still on iOS.

Here is my list! I really love cydia.

Monocle - Fullscreen mode.

SwipeNav - Love it

I can't find Monocle anywhere. Which repo is it?

What does SwipeNav do? The description in Cydia doesn't make sense.

I'm a total noob, just jailbroke my iPhone 5 for the first time a few weeks ago.

Still, here's my list of essential tweaks/apps:

Auxo
Barrel
IntelliscreenX 6
Quick Reply for WhatsApp
Springtomize 2
Swipe Safari
SwipeSelection
Winterboard
Zephyr

can winterboard and springtomize2 be used together or do I have to choose one or the other? Which one is better?

Nice list, here's my take on some of your choices:

I used to be a SBSettings guy, but now I've converted to NCSettings. It's got a flashlight app, and looks soo much cleaner like it belonged to iOS.

SMSTimestamp? That's not a bad idea.

CAM Time -- Better to use CameraTweak (http://www.ijailbreak.com/cydia/cameratweak-cydia-tweak-ios/). Includes CAM Time and does more with exposure control. Just annoys me to have to use Camera+.. I'd rather just use the existing camera app.

FastBlurredNotificationCenter makes the NC not so yucky. I like seeing the iphone icons when pulling down the NC.

Is 3G Unrestrictor stable for iPhone 5? I heard it wasn't so was waiting a bit.

Status tab? How does it work with full screen app games? Does it work with every game? Yeah that would be nice to know how much battery you are eating up when playing.

I'll add Zephr to your list (http://www.iphonehacks.com/2013/02/...ew-screen-area-setting-for-app-switching.html) . I hate smashing the home button to get task manager up. I always feel that the home button is going to wear out. Zephr takes care of this.

Thanks for sharing your insight! I just have a few questions if you don't mind....

First, Does NCSettings have toggles for 3G Unrestrictor and Insomia? I use these two a lot.

And lastly about Zephyr, isn't it Activator has the option of assigning a gesture for a home button plus there is an option of using Assitive Touch to have a home button on screen? So what's good with Zephyr??

Now with regards to your own queries.... I'm not sure about 3G Unrestrictor working on iP5 but it's working just fine on my 4S.

About Status Tab... well it works just fine with mine again. It's just like swiping down from the top of your screen and a status tab would temporarily appear. Swipe down again and the notification center screen will drop down. Give it a try my friend... any way it's free!!! :D

I can assure you that the phone will lag with this number of tweaks .

quick question on Auxo, how do i close individual apps???
when i press n hold 1 app it gives me an option to kill all apps! i just wanna close 1-2 of them...

can winterboard and springtomize2 be used together or do I have to choose one or the other? Which one is better?

Others can correct me if I'm wrong but Winterboard is used for theming your phone while Springtomize is a set of tweaks for customizing how your phone behaves. Yes, they co-exist well; both run just fine on my 4S with 6.1.2.

Why would you want to remove the battery icon?

IOS batteries die too quickly to NOT have that showing so you know where you stand

why not? i have it removed. i've just got the percentage shown, cos i need space in the status bar for other icons like missed calls, Facebook notifications, sms's, whatsapp msg's, instagram notifications, emails, etc. the battery icon just takes up space.
