I'd still try a cable swap as you've nothing to loose at this point. Does the table have any preferences? if so might be worth to delete them from the Library, unlikely to change anything as an IPSW restore should wipe everything.

what makes least sense is that the tablet work as intended on your other Mac, which leads to a 11.5.1 issue, yet the revert to 11.4 fails to resolve? I wouldn't be too happy either as wiping and resetting takes time and that costs, worse no resolution...

The tablet does not have any preferences so there is nothing I can do. At this point, I would just contact Huion for repair or replacement cause that's the only choice I have unless M1 Mac mini is still broken.

I'd be inclined to go back to Apple and show them or if not practicable send them a video of the issue with both Mac's and request resolution. Short of that out of ideas :(
I tested a graphic tablet and I really can say it's a Mac's problem. It works totally fine with USB-C cable on other devices. At this point, I need to show this to Apple Store technician but I can't carry the main display to prove it. Hmmm...

The Apple Stores are nominally reasonably amenable so I don't see why they wouldn't help, not like they don't have displays on hand.
