So far I haven't seen any Upgrade prices for the Student/Teacher edition.

I don't think Adobe has upgrade pricing for the Student/Teacher editions of their software. The discount is pretty steep as it is since a full version of CS5 Design Premium checks in at $1,899 and the upgrade version costs $599.
 
I have an i7 MBP with 4gb ram. Does anyone have any thoughts on whether upgrading to 8gb ram will provide a noticeable difference in performance for Photoshop, given that CS5 will provide a 64-bit version?

I think it depends on how big the files you're working with are and how many different programs you typically have open at once. If you work with huge files (in the 100's of MBs or more), and have most of the CS open at the same time, I think you'd definitely see a boost.
