Two airport Extremes on a vacant channel should do the trick.
The Express just doesn't have the distance. Don't even try.

Use your Mac to find out what other WiFi channels are already in use.
The AirRadar app can also speed up the process.

Picking channel 1, 6, or 11 instead of a 5ghz (channel 149) got me better distance with higher throughput.

Do not try to get by with 2,3,4,5,7,8,9, or 10 because they just overlap causing interference with the primary channels 1, 6, and 11.

If the channel you pick becomes inconsistent be wary of interference from 2.4ghz cordless phones in the area and pick a different primary channel.

....they would have a fit if I pulled a stunt like that. So, I'm left with wireless options.

There is another option. get them the least expensive Comcast or ATT package and save yourself the hassle. Pitch in dough if they are needy. If they aren't needy, then frankly I don't give a crap.
 
I you are already using an Airport Extreme. I would go with the Airport Express. This way you can manage them both in the Apple Aiport Utility. I use the Express to extend my network with no problem.
