OneNote and Excel are crashing on launch on my side.
Teams, Planner and OneDrive are working. I'm glad Microsoft365Admin and MS Authenticator are working for me as well, since I need those.
 
My SSO login seems to be causing the MS apps to crash. I deleted the apps and reinstalled them. I can log in using my personal account and seems to be running fine. When I try to log in with SSO work account, it starts to crash right after.

Update: I can confirm OneNote and Excel do work when using my personal MS account. It crashes right away when I'm using my Office365 account from my tenant. There must be an issue when using Office365 (SSO) account, as @gwang73 stated.
 
I’ve removed every MS app from my iPad, but when I reinstall any Office app, it signs me in automatically, then crashes. How do I sign out my MS account? I can’t even work out where it’s signed into.

I'd say Outlook, but then what's the point of signing off my work account, when that is what I need to work. I'm using my iPad as my work-from-home device, and my personal Office account is only for my family. I have no way to access work email from my personal account.
Microsoft or Apple need to fix this ASAP. I went through the entire beta testing, all they way back from Beta 1 with no issues at all. I upgraded to the RC without testing because of that. Now I regret it.

Sad to hear signing in with a personal MS account isn't working out for you. In that case, we have to wait for Microsoft to come with a new update with iOS 15 support. Most likely next week..
Testflight detected the crash for me, and I've submitted feedback.
 
Developers can now submit their iOS 15 SDK updated apps for review and approval into the App Store.

Obviously, time is needed to review and approve. Apple may be accepting submissions, but we don’t know when Apple will let them loose in the App Store. I’m thinking Friday, in time for iOS 15 to be out publicly Monday, but could start populating tomorrow.

That means, you all are stuck with the issue until Microsoft submit their updated Apps.

Rather than people psting they’re also affected, as it’s clear it’s affecting everyone, better to feed back to Microsoft on Social Media, although they are likely already aware, but don’t hurt to chase them.
 
This worked for me, in case it helps anyone else. I don’t know how many of these steps are actually needed:
- Deleted all my 365 apps (Word, Excel, Powerpoint).
- Redownloaded Word.
- Accessed the Word settings from the settings app, reset -> reset word -> delete sign-in credentials.
- Opened Word, it crashed.
- Re-opened, and signed back in with my MS account. All working.
- Redownloaded Excel and PP, also now working.

UPDATE: Did the above procedure, but logged in with my personal Office 365 account. Everything works now, but I lost access to my work files, so still not an ideal solution. I can keep a local copy of the files on my iCloud Drive, but at least I can work now.

This is weird. Outlook and Teams are still logged in with my work account, but I was able to log into the Office app with my personal account. So this is at least pretty good for now.

The only thing I’m missing is the shared OneDrive files from work, which I can live without for the next few days.
 
This is a problem for me too. It works on my phone with the RC but not on the iPad Pro. I have reported to Apple Feedback too. Hoping MS fixes soon. Outlook works and OneDrive works but the rest of the MS Office suite apps crash as stated with everyone else. I did notice that just now OneDrive and Outlook both had updates in the App Store. Here's to hoping the rest drop over night.

We’ll, just updated Outlook (freightening, really), but it kept working. I uninstalled Edge, so I clicked on an internal email link, and my company requires Edge for browsing the web on internal hosts, so I reinstalled it, and logged in with my personal account. It worked.
Now, I tried visiting the link again, but I can’t do it logged in as my personal account, so I logged out and logged back in with my work account. I thought it was going to break, but is working as well.

I’ll leave it like that for now as I’m able to work for the next few days as it is. But once I see all apps get updated, and you guys reporting that things has settled, then I’ll try to log back in with my work account on the Office app.
 
Although I don’t use office apps often on the phone, I will wait for the official release this time. I always installed iOS GM/RC before 😁

Count me in. As soon as RC was installed, OneNote, Excel, Word, Powerpoint etc. crashed instantly on start.
Wonder why it's always Microsoft apps that give me trouble. Everything else works fine.
Luckily I haven't sold my last year's iPadPro 12.9 just yet. It's still running iPadOS 14.x
 
UPDATE: As I mentioned last night, I was able to make them work by logging with my personal Office account, while leaving Outlook and Teams logged in with my SSO account, and it worked.
Then I tried to click on a company link I received in an email, and it required Edge to be installed. So I reinstalled it and logged with my personal account, then tried to click on the link again, and it triggered Edge, but won't let me visit the link if I'm not logged in with my SSO account (expected), so I logged out of my personal account in Edge and logged back in with the SSO account, and immediately all apps began crashing again.

So, I reverted all I did, and I'm right now like last night. Logged in with my personal account in Office, but my SSO on Teams and Outlook. So, I can live like this for a few days. I'm only missing visiting company links, so for that I'll have to use my Macs.
 
As I mentioned, we just have to wait for MS to get it fixed and for the update to roll out.

it’s worth tweeting at MS about it, see if they confirm they are aware and working on a fix. They probably are, but good to get them to confirm
