Man, B&H's prices are great! Sheesh, if I didn't want to delay my order and deal with other stuff, I'd cancel and order the i7 with them.

I got my Mac mini through them in June -- great experience. Love their Manhattan store too.

I can't speak for any of the other shops, but I can say that B&H is fantastic. When I ordered my mini, I was able to get it for under what the EPP price would have been + sales tax. $2399 for the i7 with 8 GB of RAM and no tax/free shipping plus Apple Care basically equals what I paid for my i7 without the RAM upgrade and Apple Care (actually it still comes out less).

Like I said, if I could feel confident I wouldn't be waiting even longer than I'm already waiting, I'd cancel now.
 
I almost ordered through the Education store (my Id still works and my mom is a school counselor if I needed to go through other means), and that would have saved me around $250+, but since I'm writing this off as a business expense, I decided not to.

Not that I'm condoning this but Apple receipts don't say what store you bought the item from. Its the same receipt for all the stores. So you could take the education discount and still wright the machine off. Unless you were buying the machine in the companies name, then it would be hard to go through the education store.

"No, really Apple my name is ABC Designs. Yea, I know, my parents were weird".....
