So, I wanted to update. I finally talked with customer service. They walked me through some things and asked a bunch of questions. Finally they told me it was an aol problem and if it continued, I needed to talk with them. I told them people were having issues not just on aol, so I doubt anything will get fixed since they think it’s an aol problem.
I talked with both Apple and AOL support and they each pointed to the other.

This is one of the most frustrating things for a consumer these days. I’m also having a visual voicemail issue that Apple points to my carrier, and my carrier points to Apple. And I’m stuck in the middle trying to troubleshoot for both.
 
Have any of you noticed that this might be occurring when the phone is trying to connect to a web site or is trying to connect to a WiFi network? I can't say for sure but I've noticed the phone freezing some of the time when trying to connect to a Wifi network. When this happens, it "unfreezes" shortly afterwards.
 
I had this issue a couple of days ago and I force quit the mail app and restarted phone and it seemed to disappear - not sure it is at all related to your problem but thought I'd said what I did and what happened
