It's not easy, per se, but you can still do it in 3.0.
Fill the last page with apps, and then slide the ones you want to hide past the last page. It will then be hidden, but still accessible via search.

I completely miss my jailbroken iphone. While i love the fact that i can text & e-mail in landscape - I miss all the possibilities that jailbreaking offered. For instance "cracked apps" - of course NONE of them work now.
Speaking of apps I made a boo-boo when I upgraded. I used categories and I completely forgot to remove all of the apps from the folders. Well needless to say the app icons are GONE.
I think I will be okay until the release the *OFFICIAL* jailbreak software for 3.0.

I did the same thing, to fix it I did a remote wipe through mobileme. Don't know if you can do the same without mobieme, but they have that 60 day free trial...
