Well as you questioned... the thread is applicable at the top of the forum but emanates from the loss of a headless solution to carry forth or replace the Mini - it typifies the angst many users feel. I would have no issues should someone take the tagline to the masses.
I suppose you will also complain about the elimination of the floppy disk drive, Apple Desktop Bus, Apple Display Connector and RS-422 ports?

If we're including software features, Apple is removing over a dozen of them from MacOS Server.
No... Apple has “Hyperbole”. That hasn’t been eliminated. We might actually have more of that now.

I don't think anyone has mentioned Apple Displays and AirPort (which I know is still sold, but it looks like it will never be updated).
I hated the feel of the aluminum keyboard, and gave that to my kids to use with their Mac Pro 1,1. I use the older Apple keyboard with the white keys and clear plastic body. While it is not as attractive as the aluminum one, it just feels better when using.
I have not use anything newer then the aluminum keyboard that came with my Late 2012 iMac, and my wife's 2011 MBA, but have they gotten worse than that?

They now have a keyboard with a very shallow stroke (about 1/16" of movement) and much softer to press than the keyboards you're used to. For anyone used to typing on a real keyboard (including the ones you're used to), the new keyboards are a horrible experience. To make matters even worse, they screwed up the design so that a tiny particle of dust inside will stop a key from working.
They've discontinued the standalone keyboards they had for iMacs as well and replaced them with an external version of the new laptop keyboards. Far worse keyboard, they jacked up the price, and glued in a non-replaceable battery so you can throw away the more expensive keyboard in about 3 years and buy a new one to help Apple make an extra profit (isn't Apple so environmentally friendly?)
The new one is even worse than the one you hated. At least with an iMac you can get rid of the Apple keyboard and use something good. With a notebook you're out of luck.
All the removed items you list are outdated tech. Why not mention floppy drives?
Headphone jack is outdated ? Only according to Apple, but not to Microsoft. Remember "Apple thinks differently"
Yes they do and as user I do as well. Get into wireless headphones you’ll never look back, and don’t play the audiophile card it’s so pretentious.
I still like the wired headphones. They never need charged and just work day in and day out.
Perhaps expansion bays aren’t necessarily old tech. Depending on the use case and the computer used.
I thought the same thing. Based on the Mac Pro section here, people are clamoring for these slots.

These things were dropped because they were well and truly obsolete, or pointlessly proprietary, and usually ridiculously bulky.
Now, things are dropped so that the new model can be 1% thinner and Apple's margins can be 1% higher.
Heck, even the startup chime has been axed.
I don't know about the 1%, but you have a pretty good point.
Apple made the late 2012 iMacs thinner, and by doing so, removed features. Also, there are cooling issues related to the thinner design.
Did anyone really ask or want this? I have a late 2012 iMac and the thinness does look impressive, but sitting in front of the iMac, I really have no idea how thin it is. It seems that the design was made for onlookers, and not with the user in mind. This is like the opposite of the upside-down Apple story.

And I'm just lol at you calling expansion bays outdated tech. Enjoy your antique sealed box next year while I pop a new video card and USB4/whatever comes out next in my computer in 5 years.

The vast majority of people these days buy portable computers and have no need for bays.

Many of us have portable computers. But that doesn’t mean we don’t need expansion bays.
My portable computer’s primary function seems to be reminding me how much I need my desktop. It’s frustrating trying to work with such limited options. I only consider my portable a worst case necessity. It’s there if I must. But I’d really rather not.
