I hated the feel of the aluminum keyboard, and gave that to my kids to use with their Mac Pro 1,1. I use the older Apple keyboard with the white keys and clear plastic body. While it is not as attractive as the aluminum one, it just feels better when using.

All the removed items you list are outdated tech. Why not mention floppy drives?
Headphone jack is outdated ? Only according to Apple, but not to Microsoft. Remember "Apple thinks differently"

I don't know about the 1%, but you have a pretty good point.These things were dropped because they were well and truly obsolete, or pointlessly proprietary, and usually ridiculously bulky.
Now, things are dropped so that the new model can be 1% thinner and Apple's margins can be 1% higher.
Heck, even the startup chime has been axed.

The vast majority of people these days buy portable computers and have no need for bays.
