There was always a solid version of the logo, for wherever color printing wouldn't work.

Does somebody know the dates of creation of those different apple logos

1 - The "Newton" Logo > Drawn by Ron Wayne in 1975

There has always been a solid color version of the logo. The solid and glossy logos didn't "replace" anything - the rainbow logo simply fell out of favor.

The iMac G3 started glossy logos, and there have been flat solid logos before and after that.
 
Does anyone on here know any good tutorials for creating the apple aqua look? I've looked online, but I can't seem to find anything of good quality
 
Someone on eBay actually sold an internal Apple manual on the logo and its history and use, and it was very recent as it included all the "flavor" color logos.

Needless to say, the manual went for big $$$...
