I had over 1300 notes in Apple Notes and performance was still great: fast search, sync, note entry etc.. Maybe it slows down with more notes, but I think we need more real life examples to draw conclusions. In the past Apple Notes had a bug which made it slow down even with only a few notes.

I am now keeping the same amount of notes in IA Writer and 1Writer and both apps perform great.

Yeah, I have been using iA Writer as my primary recently. I really really like it. Simplistic, easy, … fast. :p

OP, if you want to use Apple Notes, make sure to make use of the markdown features. Otherwise, you may have a hard time finding specific notes. I have several folders in Apple notes. Sync has been a little slow at times between Apple devices. I haven't lost any notes, though. :) Always make a backup and a backup of your backup. Do not solely rely on any one app or service.

In my opinion, the Bear app works very well and now comes with Siri Shortcuts. I think it has a much better layout and friendly user UI, than Apple Notes. Things 3 is another great app for creating notes and reminders. If you need to get more involved with your writing, Ulysses is an excellent app that has all the flexibility needed for writing a daily journal to a movie script.

Apple Notes has a couple problems for me. The biggest, is that it's not cross-platform. It's really useless for me if I can't put information in from other than the Apple ecosystem. The next biggest is that, of course, it's iCloud, and I'm not about to trust anything important to that.

The few notes I have in Apple Notes are just scratchpad stuff, and those are in IMAP where they belong.

I use Evernote. Not that Evernote is some stellar thing, and of course I back it up, because who knows if the company will be there next year, but at least it's not iCloud that you *can't* back up.

I have had a lot of issues with Apple Notes. Slow syncing as I mentioned before, some notes have been lost - although possibly due to my incompetence, such as having the same note open at the same time with different content on different devices. I have >1700 notes in Evernote and have never had a problem. Always fast and responsive. But I confess I don't do much multiplatform (iPhone, iPad, Mac) editing with Evernote. I usually am just capturing web pages, such as for this post, so I can remember what I have said.

I particularly like the ability to sort my Evernotes by the various columns (Author, Created, Notebooks, Size, Updated, etc.). Haven't found a way to do that in Notes. I have also had problems in the past when resolving synching issues on my Mac, which has resulted in duplication of notes. Took a lot of time to delete all of those duplicates.

Ive used it because its simple...not sure I really like the features. Easy sync across iPhone, iPad & Mac is great...
 
I was continually going over my cellular quota and wasn't sure why. Checking my usage Apple Notes had used 3.2 GB of cellular data. That explains the slowness that I was experiencing where I'd bring up a note and then notes froze for minutes - it was synching a lot of data. I just deleted ~1750 notes. Does seem faster. Looks as if I will have to delete more notes as it has now used 4.3 GB of data. I'm thinking of maybe removing some of the images I put in notes.
