It appears to be this one - https://www.apple.com/ios/feature-availability/ - and I don't think it means a huge amount. It is just languages, not regions.
Here where you are coming from but at the top of the page it says:

Appreciate it says *some* but seems a weird inclusion when it’s not available outside of the U.S yet...
Heck in the US there are still places that don't have chip enabled, or worse the ultimate cash only cavemen!Went to Rymans yesterday and they did not even allow contactless. What! Had to remember my PIN.
Finally got to use Express Transit on the tube yesterday, found it to be flakey on tapping in, but fine on the way out. Not as quick as just pre authenticating before getting to the get though.
Have Asda removed the £30 limit? Notice the one near me at Langley Mill has seemingly removed the £30 Apple/Google Pay signage at the self serve and on the contactless button on there.
If you can find any hand sanitiser though lolNext time I’m in and likely to spend over £30 I’ll give it a go and see what happens. Question is... a mountain of toilet rolls or gallons of hand sanitiser? ?
Hoping when retailers update to the new contactless limit the holdouts will also allow limitless for Apple Pay.
