You don’t have to specify using Apple Pay, I just normally say can I pay with contactless please. Sometimes if the amount is over £30, I say I am paying with Apple Pay if I know the store accepts it, to avoid the person serving me saying that the contactless limit is £30. It’s still not unusual to find staff that do not realise that Apple Pay can be above £30.
I just say either by contactless or more often by card and then just use my watch to pay. I don’t usually try Apple Pay for over £30 unless I know that the store accepts it.

Other Retailers :
Argos

I tried to use Apple Pay in Argos last week on a self service koisk. Despite the screen boasting support for Apple Pay, the attached Verifone reader was not responding to my phone. Its screen just said "INSERT CARD".

I posted on the really big thread about this but I was just in London and used ApplePay over £30 in a bunch of places. I'm an American using an American credit card. Is that way it was never denied? I used it at Sainsbury, Hawksmoor, Berner's Tavern, Randall & Aubin, numerous black cabs, Lush, Selfridges all over £30

Sainsbury’s allow for payments over £30 with Apple Pay. I’ve done it lots of times. I don’t know about the other stores though.

I can't edit the first post but Currys have a theoretical £20k limit for Apple Pay

Aldi declined my £48.02 Apple Pay payment, had to use my card (same one I use for Apple Pay).

I would think an individual transaction issue as I frequently use ApplePay for >£30 transactions in Aldi (£57 earlier this week iirc).

Strange, it did say successful on my watch when I first did it but then the terminal said insert card and my wallet app says the transaction was declined. I used it 4 other places the same day but they were all under £30.

Added Dunelm to the list. They only recently started accepting Apple Pay >£30 at my local branch so it may be a rollout across the country.

Ikea declined my £101 purchase recently, but I've used Apple Pay over £30 there before, so perhaps the limit is £100.

How does a refund work?
Just the same as paying - you tap to refund when prompted?

Jet Petrol Garages also support transactions over £30. I paid for fuel of £48 with Apple Pay today.

On a side note, I received a message from my bank today, saying due to changes in the law, contactless payments must require a PIN after 5 uses or after a certain amount (whichever comes first with an exemption for TfL and parking). How does this affect Apple Pay? These new regulations are to protect against fraud, which makes sense, I have always thought contactless cards as insecure, you can just take anyone’s card and start tapping away, obviously banks are aware of this which is why there is a £30 limit. Although Apple Pay requires Face ID, Touch ID, or passcode, and the Watch only works if the phone has unlocked it or you unlock it with a PIN. In an ideal world more people would use Apple and Android Pay and more people would demand limits be lifted in all retailers and we get the convenience of contactless with the additional security.
