I have a feeling that buckle is either glued in there or tied in somehow. I would actually be really interested in seeing a tear down of the Apple bands, mainly CB and leather loop.

The actual buckle is actually just a spring bar recessed inside the buckle, with a small enough spring release tool you can actually get up inside one side of the leather strap and release it.
