I just went through this. When you KEEP your cellular plan, it STAYS with that watch. You have to REMOVE the cellular plan and then add it again (via carrier QR code, or manually) on your new watch. Also, when unpairing the watch it will do a back up. When you restore to the new watch, it should ask you if you wanted to add the eSIM to as well. If not just do it manually like above.

Removing a cellular plan from an Apple Watch does not cancel your service with your carrier.
Thanks for the knowledge! Early on, like with the first Apple Watch, I thought it was different. But I will remove the plan when I unpair the watch.

So as you pair your new watch to the phone, it basically is porting the number associated with the number given to your AW Account at the carrier to the new eSIM on your new watch.

Shipping is a bit crazy this time! I changed my mind and cancelled the Watch 8 ordered right after the announcement to order the Ultra instead.

Got an estimated delivery of Sept 30 to Oct 5 I think. Then it changed and was delayed about a week. Never have seen that before from Apple.

Then last night UPS has the watch last in Shanghai and now is in a "clearing facility" with an expected delivery on Monday the 26th!

Makes sense, but that also means probably another $30 activation fee .... UGH

If I get charged, I call ATT and get it waived. They’ll usually do it for customer loyalty or if you’ve been with the carrier for a long time.

I had a hellacious eSIM activation on my 14PM- so I told them and had them out it in notes through my tech support time. “Don’t even try to charge me after this circus!” 😂
