Interruption of services doesn't even make sense.

You either have applecare or you don't. You can't let your warranty lapse and then pick it back up.

As others mentioned you have pretty much a year minus a day to get Applecare, so there is no need to rush out and get it, perhaps except if you might forget.
 
What does it matter when I buy the extended warranty? There are no pros or cons to this, it's my decision and my money.

Here's a con, as SquareTrade warranties go, you can get them cheaper than their 20% off that they're running now. They regularly publish a 30% off code. If you have bought all of the ST warranties you say you have then you get those emails constantly. Spending more money than necessary isn't exactly a positive aspect.

And you read what I said, I already used 30% coupon on it, not 20%.
