Bit i take it with this and home sharing or however it works i couldn't pick it up drive 10 miles to my mums and then plug it into her wifi and watch my stuff like i can with myplex?

That's correct. In order to access your content from your mother's house you'd need to run the Plex server on your computer at home and the Plex client on the ATV2. As far as I know that's the only option for "remote access" of your content.

With iOS5.1, can aTV Flash stream 1080p (obviously output at 720p for ATV2) without any problems? Or does playback stutter?

Also, when new iOS updates come out, do you have to wait for an update from aTV Flash?

You can't have aTV Flash (black) and iOS 5.1, since a jailbreak is required to install it and none is available for 5.1.
 
I wonder if the next aTV Flash could allow blu ray disc images to be played on the Apple TV 3. Do you think the hardware is capable of that?
