My new 14" M2 Pro is at 97% after only 5 cycles, is this something I should worry about?

I am 243 cycles and 90% left. This is definitely faster degradation than I expected, given how much lithium battery tech should have evolved.

Turn off battery optimization. This function limits battery charging and battery forgets how to charge up to 100%. Mine was 93% until turned off and got back to 99-100. This function is there only to save the warranty repairs for Apple - it will degrade slower with the function on so you never hit 79% to be able to use their free repair.

And it feels like 79.7 at 244 cycles is terrible ;) but the apple settings reports 83%

Yeah that's not great ... I guess 2021 - 2023 = 2 years so Apple will probably say it's within "normal" parameters - do you have AppleCare+? If so, you've got till the end of next year to get a battery replacement if that 83% drops below 80% (assuming you bought it late 2021).
